Mexi-Cheesy Chili Chip Dip

1 (8 ounce) package cream cheese, softened

8 ounces processed cheddar cheese, cubed

1 cup salsa

1 (15 ounce) can chili without beans


Mix cream cheese, processed cheddar, salsa, and chili in a large saucepan over a medium-low heat.

Stir until the mixture has melted and become well blended.

Pour into a heat resistant dish and serve with Nacho chips.

Crab-stuffed Tomatoes

eight small Tomatoes

1 can Crab

low-fat or fat free plain Greek yogurt

two teaspoons of dijon mustard

fresh, chopped chives

Old Bay seasoning to taste

Directions

Slice eight small tomatoes in half and scoop out the centers. Combine one pound of pre-cooked lump crabmeat (from a can) with three tablespoons of low-fat or fat free plain Greek yogurt. Add two teaspoons of dijon mustard to the crabmeat mixture and spoon into the tomato halves before sprinkling with fresh, chopped chives and a Old Bay seasoning.
Note: Water-packed albacore tuna can also be substituted for crab.

1 medium Melon, scoop out small melon balls

Get the best quality prosciutto you can find, and wrap around melon slices or melon balls of your choice. I also wrap prosciutto around steamed/grilled asparagus.
