Dirty Rice

Ingredients

1 LB Ground Beef or Turkey
1 small package yellow rice
Green pepper and onion to taste

Directions

While browning beef in a large skillet, start the rice in a cooking rice as directed on package, and cook only until beef is done.

Drain the beef, add green pepper and onion for flavor.

Add beef, green paper and onion to rice.

Cook on medium heat and stir so rice won't stick to the bottom of the skillet.

allow to cook until the water is absorbed and the the rice is tender

 

Macaroni Chili

2 LBS ground beef (or turkey)

1 can 28 oz tomatoes 1 quart tomato juice 2 cups chopped onions 4 cloves garlic, minced 3 tbsp chili powder 1/2 tsp ground cumin 1/2 tsp oregano 1/2 tsp pepper 2 bay leaves 2 cans (15 oz each) kidney beans 1 pkg (8 oz) elbow macaroni

 

In Dutch oven or large saucepan, brown ground beef.

Add tomatoes, tomato juice and seasonings.

Simmer, covered, 45 minutes.

Remove bay leaves, stir in kidney beans and simmer 30 minutes or longer.

Cook macaroni according to package directions.

Drain and combine with Chili.

Serve in bowls topped with chopped red onions and Parmesan Cheese.

About 6 servings.

Biscuit Casserole

1 LB ground beef, browned and drained
1 teaspoon salt
16 oz can Pork & Beans
2 tablespoons brown sugar
1 slice onion
1 can (10) Biscuits
1 cup shredded cheese

Preheat oven to 375 degrees. Mix together in pan on stove, ground beef, salt, beans, brown sugar and onion slice. Heat until bubbly. Cut Biscuits in half to make 20 half circles. Place cut side down. Bake 25-30 minutes.
