Fresh Basil and Tomato Casserole

Ingredients

1 lb ziti (large macaroni)

1 8 oz pkg grated mozzarella cheese

12 plum or 4 large ripe tomatoes,

thinly sliced 4-5 cloves of garlic,

minced 20 leaves fresh basil, torn up

1/2 cup olive oil

1/2 tsp salt dash of pepper

grated Parmesan cheese

Directions

Place tomatoes, garlic, basil, salt and pepper and oil in glass bowl.

Seal with saran wrap and marinate at room temperature 2-4 hours.'

Cook ziti, drain and place in serving bowl sprayed with Pam or other cooking spray.

Add mozzarella cheese and mix lightly.

Let stand to allow cheese to melt, toss with tomato mixture to blend.

Sprinkle with Parmesan cheese and serve immediately.

Stuffed Zucchini

stuffed zucchini

Ingredients

6 medium zucchini squash

1/4 cup butter

1 clove garlic, chopped

1 medium onion, chopped

1 cup cooked rice

1/2 tsp oregano

1 tsp salt

1/4 tsp cayenne pepper

1/2 cup grated Parmesan cheese

Directions

Wash and stem zucchini.

Cut in half lengthwise.

In small amount of boiling water, cook zucchini, covered 5 minutes or until just tender.

Drain well, cool, scoop out seeds.

In hot butter, saute garlic and onion until golden (do not let garlic brown); add tomato, rice, oregano, salt and cayenne.

Toss with fork to mix well.

Preheat oven to 450 degrees.

Sprinkle inside of each zucchini lightly with salt; fill with rice mixture and sprinkle with Parmesan.

Arrange in single layer in buttered baking dish.

Bake uncovered 15 minutes.

Place under broiler several minutes to brown tops.

NOTE: This recipe makes 10-12 servings but any leftovers may be wrapped in foil and stored in the freezer for later use.

Mexican Toast

6 Slices bread (you can use French bread)

3 tbsp margarine

1 can Mexican hot chili beans

3 slices Velveeta cheese (each cut in half)

For each slice, spread bread with margarine.

In heavy skillet, place buttered bread side down and fry lightly.

Spread fried side of bread with two tablespoons beans.

Top with 1/2 slice cheese.

Zap for 30 seconds on high power in microwave.

NOTE: Instead of microwave, add more margarine to skillet, place 3 slices of toast topped with beans and cheese in the skillet and warm over low heat for just a few minutes until cheese begins to melt. May taste better than microwave.
